About the only thing about this trick is it seems to me a potato peeler would be quicker than heating up water and getting enough cold water.

Aside from that, I happen to like potato peels. I've heard that's where most of the nutrition in a potato is.

Potato peels are cork which is cellulose. You cane get the same nutritional value by eating sawdust.
The best food value of a potato is just under the peel and is unfortunately lost when a peeler is used so leave the peel on and eat it.
